  • 1 -1/2 lbs. chicken breast filets, boneless
  • 2 T. canola oil
  • 16 oz. of crimini mushrooms, sliced
  • 1 small yellow onion
  • 2 cloves garlic, minced
  • 1/2 tsp. black pepper
  • 1/4 C. chopped fresh chives
  • 1- 1/2 C. chicken broth, low-sodium
  • 2 tsp. cornstarch
  • sprinkle of sea salt

Take an extra five minutes to brown the chicken on both sides in a separate skillet, because this is going to add a depth of flavor to the whole dish. After the meat, it's onion’s turn to be sauteed for about 4 minutes (enough to pour yourself a glass of wine). Combine everything into the slow cooker and forget about it for the next 3 and half hours. Remove the chicken; add cornstarch and whisk until everything gets a creamy consistency.
