I got this recipe from my former employer's wife! It is different from the traditional meatloaf and is very tasty!

4-6 servings


  • 2 lbs. hamburger
  • 3 eggs
  • 1 C. grated carrots
  • 1 C. onions, finely chopped
  • 1 C. bread crumbs
  • 1/2 C. V8 juice
  • 1 tsp. salt
  • 1 tsp. pepper
  • 1/2 tsp. celery salt
  • 1/4 tsp. nutmeg
  • 1 can cream of mushroom soup
  • 1 C. water

Preheat oven to 350 degrees. In a large bowl, mix all the ingredients, except the mushroom soup and water. Place mixure into an ungreased 9x13x2-inch baking pan. Spread mixure evenly and add the cup of water. Bake for 1 hour. Remove from oven, spread the can of cream of mushroom soup over the top, and bake for an additional 30 minutes.
