Lydia's Lemon Bars
Serving Size / Yield
- 1 C. butter, softened
- ½ C. sugar
- 2 C. flour
- 4 large eggs
- 1½ C. confectioners' sugar
- zest and juice of two lemons
Combine sugar and 1 cup of flour in a large bowl. Add butter and mix until a loose dough is formed.
Place dough in a rectangular or square pan and press evenly. Bake for 8 minutes.
To make the custard, add eggs, 1 cup flour and confectioners' sugar in a bowl and whisk thoroughly.
Add lemon zest and juice and mix.
Pour custard onto the crust and bake for 20 minutes or until the custard is set.
Cut into squares and enjoy. For presentation, dust confectioners' sugar over the top.
