  • 1/2 lb. elbow macaroni
  • 1 tsp. shallot, minced
  • 4 Tbs. butter
  • 3 Tbs. all-purpose flour
  • 2 C. whole milk
  • 1 tsp. kosher salt
  • 1/2 tsp. ground black pepper
  • 3 C. cheddar cheese, chopped
  • 1 whole what bread
  • 1 tsp. chili paste
  • 1 Tbs. olive oil

Preheat oven to 350 degrees F. Spray a casserole dish with cooking spray. Boil salted water in a large pot. Stir in the macaroni and cook according to package directions. Melt butter over medium-high heat in a medium saucepan. Stir in shallot and cook until tender. Add milk and bring to a boil while whisking constantly until thick. Stir in the salt, pepper and cheese. Drain macaroni and stir with the cheese sauce. Pour in casserole dish.

In a small food processor, mix bread, chili paste and olive oil until well combined. Sprinkle crumbs over the mac and cheese and bake for about 12 to 15 minutes or until lightly browned.
