Mac & Cheese Chicken Casserole
Ingredients
- 1 1/4 C. uncooked elbow macaroni
- 2 Tbs. butter
- 1/4 C. finely chopped onion
- 4 oz. mushrooms, sliced
- 2 Tbs. chopped green bell pepper
- 2 Tbs. chopped pimiento-stuffed olives
- 1 C. shredded cheddar cheese
- 1 C. sour cream
- 1 tsp. seasoned salt
- 1 tsp. pepper
- 1 1/2 C. cooked chicken, diced
- 1/4 C. milk
- 1/2 C. soft bread crumbs, tossed with a 3 tsp. melted butter
Directions
Cook macaroni according to package directions, drain, and place in a large mixing bowl. In a large skillet, melt butter over medium-low heat. Add onion, mushrooms, and bell pepper. Cook, stirring frequently, for 3 to 4 minutes, or until onion is soft and mushrooms are browned. Add skillet mixture to macaroni. Add chopped olives, shredded cheese, sour cream, salt, pepper, chicken, and milk. Transfer mixture into a shallow 1 1/2-quart baking dish. Sprinkle buttered bread crumbs over the top and bake at 350° for 25 to 35 minutes, or until bubbly and breadcrumbs are lightly browned.
