Macadamia, Raspberry, White Chocolate Cookies

These pretty, swirled cookies are perfect for those with refined tastes.

Ingredients

  • 1/3 C. butter
  • 1/3 C. brown sugar, packed
  • 1/4 C. raspberry jam
  • 1/3 C. granulated sugar
  • 1 egg
  • 1 tsp. vanilla extract
  • 1 1/2 C. flour
  • 1 tsp. baking soda
  • 8 oz. white chocolate chips or chopped white chocolate
  • 1 C. macadamia nuts, chopped

Directions

Cream butter and sugars. Add egg and beat in. Add vanilla extract and raspberry jam. Mix well. Mix together flour and baking soda. Gradually add flour mixture to batter. Stir in nuts and chips. Drop by rounded teaspoonful onto lightly greased cookie sheets, about 2 inches apart. Bake at 350 degrees for 8-10 minutes. Don't overbake. Cool on racks.

  • I made these yesterday (following the recipe as stated) and they are very tasty...received many compliments...but they DIDN'T have a pretty swirl. In fact someone asked me if they had zucchini in them since they looked "green/grey". Next time I will try adding the raspberry jam at the very end so it doesn't get mixed in completely.

  • Please add pictures to the recipes. When I am setting my Table for our annual Christmas Open House I need to imagine what it will look like & that helps me to decide what recipes I will use.
