Macaroni and Spinach Quiche

This recipe makes a cheap, appetizing meal which can be served hot for supper or cold for a picnic.

  • 1 9-inch pie crust
  • 2 C. macaroni
  • 1 1/4 C. white sauce
  • 1 egg yolk
  • 1/2 C. cooked, chopped spinach, drained
  • 3/4 C. grated cheddar cheese
  • pinch nutmeg
  • salt
  • pepper
  • 2 tomatoes, sliced

Preheat the oven to 400 degrees. Roll out the pie crust dough 1/4-inch thick, and line a 9-inch flan ring. Bake for 10 minutes. Remove and reduce the temperature to 375 degrees. Meanwhile, cook the macaroni in boiling salted water for 15 minutes, then drain. Heat the white sauce and stir in the egg yolk, spinach and 1/2 C. grated cheese. Add the nutmeg, salt and pepper and the cooked macaroni. Fill the crust with the filling and sprinkle the top with the remaining grated cheese. Overlap the sliced tomatoes around the sides. Bake in the oven for 15 minutes. Serve hot or cold.
