Macaroni Salad Meal

This was a prize winning recipe of my aunt's. It's designed to be a meal in one, great for summertime, make-ahead, picnic, pot luck, etc. Can accompany and compliment ham, sausages, bologna, salami, tuna, fish, or chicken. She cooked for millionaires, so this is not your usual throw together salad.

  • 1/2 lb. bacon slices fried crisp, chopped
  • 4 C. macaroni boiled tender (not overdone), drained
  • 1 tsp. salt into macaroni before done
  • 4 C. grated crisp cabbage
  • 1 C. grated mellow Cheddar cheese
  • 1 C. finely chopped bell peppers
  • 1 C. chopped firm ripe tomatoes cut into wedges to remove seeds and juice
  • 4 oz. chopped pimientos
  • 1/2 C. mayonnaise
  • 1/2 C. sour cream
  • 1 1/2 tsp. salt
  • 1 tsp. black pepper
  • 2 tsp. dill seed
  • 1/2 tsp. oregano
  • 1/2 tsp. cumin
  • 2 tsp. chives flaked

Mix into gallon size bowl as instructed, and refrigerate at least 1 hour before serving. A nutritious, tasty, colorful, and easy to make. You may use low calorie or low fat items to make the salad even more healthful.
