Macaroon Cookie Bars

These coconutty sweet treats for snacking or after dinner make every day taste like Christmas!

Ingredients

  • 2 C. graham crumbs
  • 1/4 C. icing sugar
  • 3/4 C. butter, melted
  • 2 1/2 C. sweetened flaked coconut
  • 1 can Regular or Low Fat Eagle Brand
  • 2/3 C. semi-sweet chocolate chips
  • 1 tsp. vegetable shortening

Directions

Combine crumbs with sugar and butter; press evenly onto parchment paper-lined 13x9 inch baking pan. Top evenly with coconut then Eagle Brand. Bake in preheated 350 degree oven for 20-25 minutes or until set but not browned. Remove from oven and cool. Melt chocolate with shortening. Drizzle over top. Chill and cut into bars.

Yield: 24 bars
