Magic Spice Cakes

Ingredients

  • 2 C. all-purpose flour
  • 1/4 C. cornstarch
  • 1 C. white sugar
  • 1 tsp. baking powder
  • 3/4 tsp. baking soda
  • 1 tsp. salt
  • 3/4 tsp. ground cloves
  • 3/4 tsp. ground cinnamon
  • 3/4 C. shortening
  • 1 C. buttermilk
  • 3 eggs
  • Allspice Cream Cheese Frosting:
  • 1 (3 oz. pkg. cream cheese, softened
  • 1/3 C. butter, softened
  • 3/4 tsp. ground allspice
  • 4 C. confectioners' sugar
  • 1 tsp. vanilla extract
  • 2 Tbs. milk

Directions

Preheat oven to 350 degrees. Grease and flour two 9 inch round cake pans. Sift together flour, cornstarch, sugar, baking powder, soda, salt, cloves, and cinnamon into a large bowl. Add shortening and buttermilk; beat with an electric mixer for 2 minutes. Add eggs, and beat 2 minutes more. Pour batter into prepared pans. Bake for 30-35 minutes, or until done.

To make frosting, in a medium bowl, blend the cream cheese, butter, and allspice. Gradually mix in the confectioners' sugar, vanilla, and milk until the mixture is spreadable. Makes 3 cups.
