  • 1 lb. Mahi Mahi fillets, chopped into 1/4-inch slices
  • 2 T. cilantro, minced
  • 2 T. ginger, minced
  • 2 T. shallots, minced
  • 2 tsp. soy sauce
  • 1 tsp. honey
  • dash of pepper
  • 1 mango, peeled, pitted, and diced
  • 1 small red onion, chopped
  • 1/2 C. fresh cilantro leaves, chopped
  • 1 jalapeno, minced
  • 1 T. fresh lime juice
  • coarse salt
  • olive oil

Place Mahi Mahi slices into a large bowl. Sprinkle with cilantro, ginger, shallots, soy sauce, honey, and pepper. Gently stir, making sure not to over-mix. Create four patties from the mixture, cover, and chill for 20 minutes. Meanwhile, combine all remaining ingredients except olive oil in a medium bowl to prepare the mango salsa. Cover and refrigerate until ready to serve. Remove the fish patties from the fridge and preheat a large skillet with olive oil over medium heat. Add the patties and cook for five minutes on each side. Serve with mango salsa.
