  • 1 lb. mahi-mahi filets
  • ¼ C. dry white wine
  • 2 lemons, divided
  • 1 clove of garlic, minced
  • ½ tsp. salt
  • ½ tsp. black pepper
  • ½ tsp. chili powder
  • 1 Tbs. vegetable oil
  • 8 flour tortillas
  • 1 red onion, halved and sliced
  • 1 cucumber, chopped
  • 1 red pepper, sliced
  • ½ C. sour cream
  • 1 ripe avocado, pitted and skinned
  • ¼ C. cilantro, chopped
  • 1 Tbs. hot sauce
  • ¼ tsp. salt

Place fish, white wine, juice from 1 lemon, and garlic. Set aside for 10-12 minutes. Remove from marinade and pat dry. Season with salt, pepper and chili powder. In a large skillet, heat oil over medium-high heat. Place fish, skin side down. Cook for 3-4 minutes per side. Remove from heat. Cut fish into 1 inch cubes.

Place fish evenly divided on flour tortillas. Top with onion, cucumber, and red
peppers. Squeeze second fresh lemon on top. Garnish with cilantro if desired.

In a food processor, pulse sour cream, avocado, cilantro, hot sauce and salt until well blended. Serve on the side.
