  • 2 lb. ground beef
  • 1 lb. ground pork
  • 1 C. evaporated milk
  • 1 C. dry breadcrumbs
  • 2 large eggs
  • 2 T. olive oil
  • 1 onion, chopped
  • 2 stalks celery, chopped
  • 2 cloves garlic, minced
  • 1 1/2 tsp. salt
  • 2 tsp. chili powder
  • 1/2 tsp. black pepper
  • 12 oz. BBQ sauce of choice

Line a baking sheet with parchment paper and set aside. In a small skillet, combine olive oil, onions, celery and garlic. Stir frequently until onions are translucent. In a large bowl, combine beef, pork, milk, breadcrumbs, eggs, onion mixture, salt, chili powder, and pepper. Form into one-inch balls and transfer to your prepared baking sheet. Freeze until meatballs are solid. If not cooking immediately, place in freezer bags until ready for use. Preheat your oven to 350°F. Transfer frozen meatballs into a baking dish and cover with BBQ sauce. Bake for one hour. Let stand for 10 minutes before serving.
