Cheesy and extremely filling, this simple crockpot soup will keep you up and running throughout the day. Best served warm and with a side of toasted bread.

  • 3 C diced potatoes
  • ½ C chopped onions
  • 2 celery stalk; diced
  • 32 oz chicken broth
  • 1 C water
  • 3 Tbs all-purpose flour
  • 1 C milk
  • 2 C sharp cheddar cheese
  • ¼ C bacon bits

Add the potatoes, onion, celery, chicken broth and water in the crockpot. Close and cook on low for 7 hours.

In a bowl, combine the flour and milk. Set aside.

When the crockpot mixture is almost done, add in the flour mixture and set it on high. Cook for 25 minutes until the mixture thickens. Add in the cheese and stir until it melts.

When you are ready, serve with some bacon bits and pepper if desired.
