Make-Ahead Ham and Cheese Muffins

- 2 1/2 C. all-purpose flour
- 2 tsp. baking powder
- 1 tsp. baking soda
- 1/2 tsp. salt
- 1 1/4 C buttermilk
- 2 eggs
- 1/4 C. canola oil
- 2 T. syrup
- 1/2 C. cheddar cheese, shredded
- 1/2 C. provolone cheese, shredded
- 1 C. ham, cubed
Preheat the oven to 350 degrees.
In a mixing bowl, combined the dry ingredients.
In a smaller bowl whisk the eggs, oil and maple syrup. Add the buttermilk to the egg mixture and stir.
Pour together wet and dry mixtures, and stir just until combined. Do not overmix. Add in the cheese and ham being careful not to overmix.
Pour the batter into a well-greased muffin tin until each cup is 2/3 full. Bake for 18–20 minutes, and allow to cool on a wire rack before serving.
