When I know I will have a busy morning, I'm all about doing as much work the night before as possible. This casserole is perfect to get a filling breakfast in just a few minutes before everyone heads out the door because you will have done all the hard work the night before!

Serving Size / Yield

6-8 servings


  • 1 Ā½ C. grated cheddar cheese
  • 9 oz. cooked spinach
  • 1 lb. italian sausage or ground beef, cooked
  • 2 diced tomatoes
  • 1 loaf cubed sourdough bread, 1-2 days old
  • 3 Tbs. butter
  • 1 C. milk
  • 1 C. heavy cream
  • 6 eggs
  • Salt and pepper to taste
  • 1-2 Fresh scallions

In a large bowl, combine cooked sausage, cheddar, spinach, tomatoes, and cubed sourdough and combine well
Butter a casserole dish and pour the mixture into it and spread evenly
In another bowl, whisk milk, cream, eggs, salt and pepper together
Pour the eggs over the casserole and cover with foil
Refrigerate overnight
Preheat oven to 375 degrees F and bake for one hour
Top with freshly cut scallionsĀ
