  • 6 English muffins
  • 6 large eggs
  • 6 slices of provolone cheese
  • 6 slices of Canadian bacon
  • Lettuce to garnish
  • Salt to taste
  • Pepper to taste

Preheat oven to 350 degrees. Spray a jumbo muffin tin or 7 oz. ramekins placed on a baking sheet with non-stick cooking spray. Crack an egg into each of the slots. Add desired amount of salt and black pepper to taste. Bake for 25-30 minutes or until set.

Meanwhile, add a cheese slice to the bottoms of each muffin. Place Canadian bacon slices on top. Once eggs are cooked, remove with spatula and place one on each egg. Wrap each sandwich in paper deli sheets or parchment paper. Place in a plastic baggie and place in the freezer. Microwave a frozen sandwich for 3 minutes and serve.
