Make-Ahead Two-Bite Brownies

- 1/4 c. softened (real) butter
- 1 1/4 c. sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 tsp. instant coffee dissolved in 1 tsp. hot tap water (Note; If you have a bit of leftover brewed coffee, use 1 tsp. of it instead.)
- 1 c. flour
- 1/2 c. baking cocoa
- 1/4 tsp. baking powder
- 1/4 tsp. salt
Add the last four ingredients to the first group. Combine until a batter forms.
Preheat the oven to 350 degrees. Line mini muffin cups with cocoa powder instead of flour. If preparing in advance, allow to sit in the refrigerator at this point for 48 hours or until baking.
Bake at 350 degrees 15 minutes until barely done. A toothpick should come out clean when inserted into the center.
