  • 1 package red velvet cake mix
  • 1 1/2 cup instant chocolate dry pudding mix
  • 2 C. water
  • 1/2 C. vegetable oil
  • 3/4 C. egg whites
  • Frosting, optional

Preheat oven to 350 degrees. In a large bowl, mix cake mix, pudding mix, water, oil and egg whites until combined and no longer lumpy. Evenly pour the batter into lined muffin pans. Bake for 20 minutes, or until a toothpick comes out clean. Cool cupcakes before frosting.
