Mamas Christmas Cake
- 1 box yellow cake mix
- 1 can crushed pineapple
- 1 jar maraschino cherries
- 1 large peppermint stick crushed
- 1 bag coconut
Make by directions on box and let cake cool. Poke holes in cake and pour some of the juice from pineapple and cherries over top. Use egg white icing, and top with coconut, cherries, peppermint, and pineapple. Keep refrigerated.
Mother's Day Story:
This was a cake mama made one Christmas. She wanted us to have a special Christmas and did not have a lot of money to bake with. She wanted the cake to be pretty so she used these ingredients. After that Christmas, the cake has become a family tradition. I was about 9 years old at the time the cake first started and now I am 40. I will cherish this recipe and my children will too.
