Mandarin Chicken

Ingredients
- 4 chicken breast halves, skinned and boned
- vegetable cooking spray
- 2 tsp. vegetable oil
- one 11-oz. can mandarin oranges, undrained
- 3 Tbs. firmly packed brown sugar
- 1 tsp. prepared mustard
- 2 small green onions, chopped
- 3 Tbs. ketchup
- 1 Tbs. vinegar
- 1 tsp. cornstarch
- 1/2 tsp. ground cinnamon
- 1/8 tsp. ground cloves
Directions
Coat a large skillet with cooking spray and preheat over medium high heat. Add oil. Lightly brown chicken for about 3 minutes on each side. Drain oranges, reserving the juice. Set oranges aside. Combine juice and remaining ingredients, stir well, and pour over chicken. Cover and simmer for 30 minutes. Add reserved mandarin oranges and simmer for an additional 5 minutes or until chicken is tender.
