  • 1 tsp. ginger, finely chopped
  • 1/3 C. rice vinegar
  • 1/4 C. orange juice
  • 1/4 C. oil
  • 1 tsp. toasted sesame oil
  • 1 (1 oz.) pkg. dry onion soup mix
  • 2 tsp. white sugar
  • 1 clove garlic, pressed
  • 1 (8 oz.) pkg. pasta
  • 1/2 cucumber, sliced
  • 1/2 C. red bell pepper, diced
  • 1/2 C. red onion, chopped
  • 2 Roma tomatoes, diced
  • 1 carrot, shredded
  • 1 (6 oz.) bad fresh spinach
  • 1 (11 oz.) can mandarin orange segments, drained
  • 1 large apple, cored and sliced
  • 2 C. cooked chicken, diced
  • 1/2 C. sliced almonds, toasted

For the dressing, whisk the ginger, rice vinegar, oil, sesame oil, orange juice, soup mix, garlic, and sugar until will mixed. Cover and set aside in the fridge. Boil a large pot of water and add the pasta. Cook until al dente, about 8 to 10 minutes, drain, and rinse with cold water. Put the pasta in a large bowl. For the salad, add the cucumber, pepper, onion, carrot, tomatoes, spinach, oranges, apple slices, chicken, and almonds to the pasta and toss. Pour the dressing over the salad mix and toss to coat evenly.
