Mandarin Orange Cake

This is a great refreshing cake great for the spring or any time. I like to serve it on Easter and decorate it with fresh pansies.

  • Cake:
  • 1 box yellow cake mix
  • 1/2 C. oil
  • 4 eggs
  • 11 oz. can mandarin oranges
  • Frosting:
  • 1 9-oz. container Cool Whip
  • 1 12-oz. can crushed pineapple
  • 1 sm. box instant vanilla pudding

On medium speed, mix cake mix, oil, eggs and mandarin oranges. Pour batter into greased and floured 8-inch pans and bake in a 350-degree oven for 25-30 minutes. After the cake has cooled, split each layer in half. Mix together frosting ingredients and frost. Keep refrigerated.
