Mandarin Orange Delight
Ingredients
- 4 C. mandarin oranges, drained (reserve juice)
- 2 20 oz. cans crushed pineapple with juice
- 1 12 oz. can frozen orange juice concentrate, thawed
- 3/4 C. lemon juice
- 1 tsp. dried orange peel
- 1 tsp. ground ginger
- 1 tsp. ground cardamom
- 4 C. granulated sugar or Splenda
- 1 3 oz. pkg. Lime Jell-O (regular or sugar-free)
- 1 C. Clear-Jel A
- 1 C. mandarin orange juice
Directions
Drain mandarin oranges, reserve 1 C. juice. Put in a large stockpot together with remaining ingredients. Bring to a boil, turn down heat, and simmer for about 30 minutes. In a bow, whisk Clear-Jel into 1 C. mandarin orange juice. Stir into stockpot and bring back to a boil. Simmer for 5-8 minutes until thick. Ladle into sterilized jars. Wipe rims. Cap and seal. Process in a boiling water bath for 10 minutes.
