Mandarin Orange Delight

This sweet orange spread is like a marmalade for your bagel or toast.

Ingredients

  • 4 C. mandarin oranges, drained (reserve juice)
  • 2 20 oz. cans crushed pineapple with juice
  • 1 12 oz. can frozen orange juice concentrate, thawed
  • 3/4 C. lemon juice
  • 1 tsp. dried orange peel
  • 1 tsp. ground ginger
  • 1 tsp. ground cardamom
  • 4 C. granulated sugar or Splenda
  • 1 3 oz. pkg. Lime Jell-O (regular or sugar-free)
  • 1 C. Clear-Jel A
  • 1 C. mandarin orange juice

Directions

Drain mandarin oranges, reserve 1 C. juice. Put in a large stockpot together with remaining ingredients. Bring to a boil, turn down heat, and simmer for about 30 minutes. In a bow, whisk Clear-Jel into 1 C. mandarin orange juice. Stir into stockpot and bring back to a boil. Simmer for 5-8 minutes until thick. Ladle into sterilized jars. Wipe rims. Cap and seal. Process in a boiling water bath for 10 minutes.

Yield: 6-7 pintsĀ
