Can only five ingredients really be tasty ? Yes indeed, if it is this colorful baked chicken with hints of flavor from China and the East !

  • 2 chicken quarters (drumstick and thigh joined)
  • 1/4 tsp. Chinese Five Spice powder
  • 1 8-oz.. can mandarin oranges, drained and juice kept
  • salt and pepper
  • 1 tsp. sesame oil
  • 2 green onions, sliced thinly on the diagonal

Preheat oven to 400 degrees. Run your finger under the skin on each chicken quarter to lift. Do not take skin off completely. Rub 1/8 teaspoon of the Chinese Five Spice powder into the flesh of each quarter. Fold skin back over. Lay quarters in a ceramic baking dish and pour 3/4 cup of mandarin juice and 1/2 cup of orange segments over the top. Sprinkle salt and pepper on top to taste. Cover with aluminum foil and bake at 400 degrees for 45 minutes. Remove dish from oven and drizzle the sesame oil over the skin of the chicken quarters. Broil under broiler until skin is brown and crispy. To serve – place quarters on individual plates, spoon juice from the baking dish and some of the mandarin orange segments onto chicken. Sprinkle with chopped green onion.
