  • 1 tsp. garlic powder
  • 1 tsp. paprika
  • 1/2 tsp. onion powder
  • 1/4 tsp. ground red pepper
  • 3/4 tsp. salt, divided
  • 4 skinless, boneless chicken breast halves
  • 1 1/2 tsp. oil
  • 1/2 C. mango, peeled and diced
  • 1/2 C. avocado, peeled and diced
  • 1/2 C. tomato, chopped
  • 1/3 C. onion, chopped
  • 2 Tbs. fresh cilantro, chopped
  • 2 Tbs. fresh lime juice
  • 1 Tbs. jalapeno pepper, minced
  • 4 tortillas

Heat a skillet over medium-high heat. Add oil to the pan. In a small bowl, mix the garlic powder, paprika, onion powder, ground red pepper, and 1/2 tsp. salt. rub the spice mixture on the chicken and add it to the skillet. Cook for 4 minutes on each side, or until cooked through. Remove the chicken from skillet, set aside, and cut into slices. In a bowl, combine the mango, avocado, tomato, onion, cilantro, lime juice, and jalapeno. Stir in the 1/4 tsp. salt. Toss to combine. Warm the tortillas and top with chicken and salsa.
