  • 2 c. of flour
  • 0.2 tsp of baking powder
  • 0.2 tsp pf baking soda
  • 2 c. of pureed mangos
  • 1 tsp of salt
  • 2 eggs, beaten
  • 1 tsp of vanilla
  • 1 c. of buttermilk
  • 1 c. of sugar
  • 0.2 c. of water 0.2 tsp of cream of tartar
  • 3 eggs whites

In a medium bowl, whisk flour, baking powder, baking soda, and salt. In a large bowl, using an electric mixer, beat butter and sugar until light and fluffy. Add pureed mangos to the mixture. With mixer on low, beat in eggs, buttermilk and vanilla. Divide batter between pans and bake for 30 minutes at 350 degrees. For another layer, bring sugar to boil Combine cream of tartar and 3 egg whites in large bowl; beat with a mixer at high speed until foamy. Gradually pour the hot sugar syrup into the egg white mixture, beating first at medium speed and then at high speed. Beat in vanilla extract, and spread the frosting on the cake. Alternate layers when transferring to a serving cups.
