  • 4 lb. bone-in beef short ribs
  • 1 lime, zested and juiced
  • 2 T. minced onion
  • 1 T. paprika
  • 1 tsp. garlic powder
  • 2 tsp. thyme
  • 1 tsp. kosher salt
  • 2 tsp. allspice
  • 1/2 tsp. nutmeg
  • 1/2 tsp. ginger
  • 1 T. sugar
  • 2 tsp. pepper
  • 1 mango, peeled, pitted, and cubed
  • 1 C. orange juice
  • 1 medium onion, chopped
  • 3 cloves garlic
  • 2 T. cider vinegar
  • 2 T. sugar
  • 1 pkg. garlic herb instant rice
  • 1/4 C. cheddar cheese

Combine all dried spices in a bowl and mix well. Rub the ribs with spice mixture, cover, and refrigerate for four hours. In a medium saucepan, combine mango, orange juice, lemon juice, garlic cloves, vinegar, and two tablespoons of sugar. Bring to a boil, reduce heat, and simmer for 20 minutes. Transfer sauce to a blender and puree until smooth. Bring ribs to room temperature and preheat your broiler to a high setting. Lightly grease a large baking sheet and add ribs. Broil until ribs are brown, turning as needed. Transfer ribs to a large pot and cover with mango sauce. Preheat your oven to 300°F and cook ribs in sauce for two hours. Prepare rice according to package directions. Combine rice with cheddar cheese and serve over mango short ribs.
