Drink your margarita and eat it, too! These cupcakes are made with your favorite box cake and a little tropical punch.

  • 1 box white or yellow cake mix
  • 3 limes
  • 1 mango
  • 1 oz. cointreau, or any orange liqueur (or sub orange juice/extract for kid-friendly version)
  • 1 oz. tequila (forgo tequila for kid-friendly version)
  • 1/2 lb. confectioners sugar
  • 1/2 tsp. salt
  • 1 stick of butter, room temperature
  • 1/2 C. half & half

1) Prepare the cake mix according to box instructions, and spoon batter 3/4 full in lined cupcake tins, (should make about 24). Bake and let cool completely. 2) Cube the mango and purée in a food processor or blender. 3) In a small mixing bowl, mix mango purée, tequila, and the juice of one lime. 4) For frosting, in a mixing bowl bowl, mix the stick of room temperature butter and salt. Alternate confectioners sugar and half & half until the frosting is thick, creamy, and peaks. 5) Once your cupcakes are completely cooled, spoon the mango, tequila, lime mixture into a piping bag. Stick the tip into each cupcake and squeeze a small amount of the mango mixture into the center. Divide as per number of cupcakes. 6) Frost the cupcakes and garnish with wedges made from the remaining 2 limes. You may consider spritzing lime juice on top of the cupcakes for an extra punch.
