  • 2 C. plum tomatoes, seeded and diced
  • 1 1/2 C. ripe mango, peeled and diced
  • 1/2 C. onion, diced
  • 1/2 C. fresh cilantro, chopped
  • 2 Tbs. lime juice
  • 1 Tbs. apple cider vinegar
  • 1 tsp. sugar
  • 1 tsp. salt
  • 1 tsp. pepper, divided
  • 2 cloves garlic, minced
  • 4 salmon fillets
  • 1 Tbs. oil

Heat the grill. In a large bowl, combine the tomatoes, mango, onion, cilantro, lime juice, cider vinegar, and sugar. Stir in the garlic, 1/2 tsp. salt, and 1/2 tsp. pepper. Set aside.
Rub the salmon with oil and sprinkle with the remaining salt and pepper. Grill the salmon for 3 minutes on each side, or until the fish flakes easily. Top with mango salsa and serve.
