  • 1 mango, chopped
  • 0.2 c. of red bell pepper
  • 1 green onion, chopped
  • 2 tbsp of lime juice
  • 2 tbsp of cilantro
  • 1 jalapeno, chopped
  • 1 ribeye steak
  • salt and pepper to taste
  • 3 T. minced garlic
  • 1/2 onion minced

Preheat oven to 350 degrees. Season steak with onion, garlic and salt and pepper and bake for 30-45 minutes or until meat is tender. Take out and let rest covered. While steak is cooking, in a large bowl, combine mango, red bell pepper, green onion, cilantro, jalapeno, lime juice, and lemon juice. Mix well. Cover, and allow to sit at least 30 minutes before serving with steak.
