Mango Tart With Chocolate Crust

- Mango curd filling Ingredients:
- 4 Mangoes
- 3/4 C. brown sugar
- 2 tsp. Lime juice
- 1 1/2 tsp. Plain gelatin powder
- 4 egg yolks
- 4 T. butter
- Chocolate tart base Ingredients :
- 7 chocolate cookies
- 1 dark chocolate, chopped
- 2 T. softened butter
To prepare the tart base begin by placing the cookies in a food processor, add the chocolate so they begin to stick. Place the mixture in a pan and place in fridge for about 2 hours.
Now for the curd filling, begin by pureeing your mangoes with the sugar. Then squeeze the lime in a bowl and sprinkle with plain gelatin. Place mixture in a small pan and let it simmer for 5 minutes. Then place your egg yolks in the mixture. Bring to boil for another 7 minutes. Then pour into the chocolate tart base and place in fridge for about 45 minutes. Place a blueberry and blue raspberry on top of the tart.
