Many Bean Salad
Ingredients
- 1 can green beans
- 1 can garbanzos (chick peas)
- 1 can white beans (piquenos)
- 1 can yellow wax beans
- 1 can small kidney beans
- 1 can small black beans
- 1 sm. yellow bell pepper, largely chopped
- 1 sm. green pepper, largely chopped
- 1 lg. Texas Sweet onion (or red onion)
- 1 C. vegetable oil
- 1/2 C. high grade olive oil
- 3/4 C. salad vinegar
- 1/2 - 3/4 C. sugar (can use Splenda)
- salt & pepper to taste
Directions
In large bowl, pour all beans (after draining) and add largely chopped bell peppers and onionĀ (can be chopped or put into slices - your choice). In small bowl, add all liquids with sugar, saltĀ and pepper. Sample to reach desired sweetness and saltiness.
Pour over vegetables and marinade overnight. Will last about 2 weeks in refrigerator.
