This salad is a wonderful mix of flavors. The nuttiness of the almonds, the sweet taste of the apple and cranberries, and the freshness of the green onion all combine to create a fresh salad that needs no dressing. It is good served hot or cold, too.

  • 1/2 C. quinoa
  • 1 C. broth
  • 1/2 tsp. oil
  • 3 oz. maple sausage
  • 1 green onion
  • 1 small apple, chopped
  • 1/4 C. almonds, chopped
  • 2 Tbs. dried cranberries

Rinse the quinoa under cold water. Boil the broth in a small pot and then add the quinoa. Cover and simmer for about 15 minutes, or until all the broth has been absorbed and the quinoa is tender. Put the quinoa in a large bowl and allow it to cool. In a small skillet, heat the oil and add the sausage. Brown it and drain, if necessary. Add the apple, almonds, sausage, and cranberries to the cooled quinoa. Toss to combine.
