Here's a seasonal dinner that includes a maple glaze with bacon. You can enjoy this pork with a side of garlic mashed potatoes.

  • 1 (4 lb.) boneless pork loin roast
  • 1 tsp. vegetable oil
  • 6 strips thick sliced bacon
  • 1/2 C. pure maple syrup
  • Salt and pepper to taste

Preheat oven to 400 degrees F. Put a rack in roasting pan. Dry outside of roast, blotting with paper towels. Rub roast with oil and season with salt and pepper. Wrap roast with bacon strips, overlapping ends. Put roast on rack, bacon ends facing down. Roast pork for 1 to 1 1/2 hours. Baste with syrup for every 15 minutes. Transfer roast to cutting board and let it rest 15 minutes before removing twine and slicing.
