  • 1/2 C. brown sugar
  • 1/4 C. maple syrup
  • 3 T. olive oil
  • 2 T. teriyaki sauce
  • kosher salt and freshly ground black pepper
  • 4 6-oz. salmon fillets, skin removed
  • 2 C. carrots, sliced
  • 2 yellow bell peppers, sliced
  • 1 C. white rice

Preheat your oven to 400°F. In a small bowl, mix together brown sugar, maple syrup, olive oil, teriyaki sauce, salt, and pepper. In a large baking dish, arrange the salmon in one layer. Scatter the carrots and peppers around the salmon. Generously glaze the salmon and veggies with the brown sugar mixture. Bake for 15 minutes. Meanwhile, prepare the rice according to box directions. Serve salmon and veggies over the rice immediately.
