An easy way to serve eggplant with big flavor.

Ingredients

  • 1 lg. eggplant, skin on and cut into lg. cubes
  • 1/2 C. wine vinegar
  • 1 tsp. salt
  • 1/2 tsp. pepper
  • 2 garlic cloves, sliced
  • 1 tsp. chopped oregano
  • 1/2 tsp. chopped basil
  • 1 C. olive oil

Directions

Boil eggplant cubes in water for 10 minutes. Drain. Put in large bowl with vinegar, salt, pepper, garlic, oregano and basil. Mix and let stand in marinade for 12 hours. Before serving, add oil and mix well.
