Marinated Carrots

Ingredients
- 1 bunch lg. carrots
- 2 garlic cloves, sliced
- 1/2 tsp. salt
- 1/2 tsp. pepper
- 1/4 C. olive oil
- 2 Tbs. wine vinegar
- 1 tsp. oregano
Directions
Scrape carrots and cut into thick slices. Boil in water for 10 minutes. Drain well and place in bowl with garlic, salt, pepper, oil, vinegar and oregano, stirring and mixing well. Let stand in marinade for 12 hours before serving.
