  • ½ C. Italian dressing
  • ½ C. soy sauce
  • 6 chicken breasts
  • Pepper to taste
  • 2 cloves garlic, minced
  • 2 tomatoes, chopped
  • 1 red onion, sliced
  • 6 potatoes, peeled and chopped

In a bowl, whisk together Italian dressing, soy sauce, pepper, and garlic. Add in chicken, cover, and refrigerate overnight. Preheat oven to 350 degrees. In a saucepan with salted water, boil potatoes for 10 to 15 minutes to soften. On a rimmed baking sheet lined with foil, add chicken to one side and potatoes, onion, and tomatoes to the other side. Season vegetables with salt and pepper and bake for 45 minute to an hour until chicken is cooked through and tender.
