Marinated Eel

Ingredients
- 1 1/2-lb. eel
- 1 garlic clove, sliced
- 1/2 tsp. salt
- 1/2 tsp. pepper
- 3 bay leaves
- 1 C. wine vinegar
- 1 C. olive oil
Directions
Place eel in the bottom of large bottom in the shape of an O. Add garlic, salt, pepper, bay leaves, vinegar and oil. Cover pan and cool gently for 40 minutes until fish is done. Remove eel from pan, place in bowl. Pour gravy over it and let it cool.
