This is a beautiful summertime garden fresh salad variation.

Ingredients

  • Fresh, seasonal ripe tomatoes
  • Canned artichokes, drained
  • Onions, chopped
  • Diced mozzerella cheese
  • Whole black olives
  • Extra virgin olive oil
  • Garlic, minced
  • Red wine vinegar
  • Salt and pepper to taste
  • Fresh chopped garden basil

Directions

Cut all ingredients and toss with oil and vinegar and seasonings. Chill overnight and keep turning container to keep marinade circulating. Needs to marinate at least 3 hours.
