Marinated London Broil with Mushroom Sauce

Flavored with parsley, rosemary, garlic and shallots, this is quite the tasty meat dish.

Ingredients

  • 1 2 lb. London broil
  • 1 lb. sliced Portobello mushrooms
  • 2 C. dry red wine
  • 1/2 C. fresh parsley, minced
  • 1 tsp. dried, crushed rosemary
  • 3 cloves garlic
  • 2 Tbs. shallots, minced
  • 2 C. beef broth
  • 1 C. diced tomatoes

Directions

Place London broil along with mushrooms, wine, parsley, rosemary, garlic and shallots in a plastic bag and secure. Place in the refrigerator for about an hour to marinate. Remove beef from marinade and place in a large skillet and cook over medium heat until cooked to your liking. Place steak aside. In the same skillet, place reserved marinade, beef broth and tomatoes and cook over low heat for 15-20 minutes. Slice London broil and pour sauce over meat.

  • I was of the understanding that using a marinade was OK as long as you brought it to a boil before using it as a sauce.

  • I also was leery of using the marinade after leaving the meat in it. When mixing the marinade, I added 1 cup of wine, 3/4 cup parsley, 1 1/3 tsp. rosemary, 4 cloves garlic and 3 Tsp. shallots. I mixed well and poured a little over half into a separate bowl and refrigerated. I used this to finish the recipe and discarded the used marinade I also used additional beef broth and tomatoes to make up the difference. It was delicious!

  • I was always told to discard marinade -not to reuse it. Is that the case in your recipe ? It sounds good but I am a little nervous about the marinade
