Marinated Mushroom Salad
Serving Size / Yield
- 1 lb. button mushrooms (or baby 'bellas)
- 1 red onion, sliced very thinly
- 2 Tbs. dill, chopped
- 2 Tbs. parsley, chopped
- 3 roasted red peppers, sliced very thinly
- 1/2 C. red wine vinegar
- 3 Tbs. lemon juice
- 2 tsp. balsamic vinegar (or sugar)
- 2 tsp. salt
- 2 tsp. black pepper
- 2 tsp. paprika
- 1 C. olive oil
Wipe down the mushrooms and place them (including the stems) into a large bowl. Also add the sliced onion, peppers, and herbs.
In a separate bowl, mix the remaining ingredients and drizzle over the mushrooms and other ingredients. Allow to sit for at least 4 hours and toss just prior to serving.
