  • 1 lb. button mushrooms (or baby 'bellas)
  • 1 red onion, sliced very thinly
  • 2 Tbs. dill, chopped
  • 2 Tbs. parsley, chopped
  • 3 roasted red peppers, sliced very thinly
  • 1/2 C. red wine vinegar
  • 3 Tbs. lemon juice
  • 2 tsp. balsamic vinegar (or sugar)
  • 2 tsp. salt
  • 2 tsp. black pepper
  • 2 tsp. paprika
  • 1 C. olive oil

Wipe down the mushrooms and place them (including the stems) into a large bowl. Also add the sliced onion, peppers, and herbs. 

In a separate bowl, mix the remaining ingredients and drizzle over the mushrooms and other ingredients. Allow to sit for at least 4 hours and toss just prior to serving.
