Marinated Pork Roast
Ingredients
- 1/4 C. olive oil
- 1/4 C. white wine vinegar
- 1/4 C. dry white wine
- 3 tsp. chopped fresh rosemary or 2 tsp. dried rosemary
- 1/2 tsp. salt
- 1 tsp. fresh ground pepper
- 2 cloves minced fresh garlic
- 1 two pound boneless pork loin roast
Directions
Combine first 7 ingredients and marinate pork loin roast in mixture for at least three hours. Remove pork loin roast from marinade. Place roast in baking dish and sprinkle with marinade. Roast at 450 degrees for 15 minutes. Allow to rest in warm place for 20 minutes. Slice roasts and serve immediately. Go ahead and cook this on a charcoal grill if you live in a climate that is still warm enough for outdoor cooking.
