Marinated Pork Roast

Marinated Pork Roast

Can be cooked in the oven or on the grill during the summer.

Ingredients

  • 1/4 C. olive oil
  • 1/4 C. white wine vinegar
  • 1/4 C. dry white wine
  • 3 tsp. chopped fresh rosemary or 2 tsp. dried rosemary
  • 1/2 tsp. salt
  • 1 tsp. fresh ground pepper
  • 2 cloves minced fresh garlic
  • 1 2 lb. boneless pork loin roast

Directions

Combine first 7 ingredients and marinate pork loin roast in mixture for at least 3 hours. Remove pork loin roast from marinade. Place roast in baking dish and sprinkle with marinade. Roast at 450 degrees for 15 minutes. Allow to rest in warm place for 20 minutes. Slice roasts and serve immediately. Go ahead and cook this on a charcoal grill if you live in a climate that is warm enough for outdoor cooking.

The Skinny: Pork is one of the leanest meats you can get and the loin roast is a very lean cut.
