Marinated Shrimp

Serve these on their own as an appetizer or with rice and veggies for a full meal.

  • 2 lbs. cooked shrimp, peeled and deveined with tail intact
  • 2 med. Vidalia onions, thinly sliced
  • 4 bay leaves
  • 2 lemons, thinly sliced
  • 2-3 Tbs. fresh oregano, chopped
  • 1 C. extra virgin olive oil
  • 1/4 C. fresh lemon juice
  • 1/4 C. white wine vinegar
  • 2-3 Tbs. garlic, minced
  • 2 tsp. black peppercorns
  • 1 tsp. mustard seed
  • 1 Tbs. salt

Combine all ingredients except shrimp to make a marinade.  Pour marinade over shrimp, making sure shrimp are completely submerged.  Cover and refrigerate for 48 hours, stirring occasionally.  Serve shrimp drizzled with marinade.
