Marinated Shrimp
Ingredients
- 2 lbs. cooked shrimp, peeled and deveined with tail intact
- 2 med. Vidalia onions, thinly sliced
- 4 bay leaves
- 2 lemons, thinly sliced
- 2-3 Tbs. fresh oregano, chopped
- 1 C. extra virgin olive oil
- 1/4 C. fresh lemon juice
- 1/4 C. white wine vinegar
- 2-3 Tbs. garlic, minced
- 2 tsp. black peppercorns
- 1 tsp. mustard seed
- 1 Tbs. salt
Directions
Combine all ingredients except shrimp to make a marinade. Pour marinade over shrimp, making sure shrimp are completely submerged. Cover and refrigerate for 48 hours, stirring occasionally. Serve shrimp drizzled with marinade.
Serve with: Cajun Corn, Rice, and Beans
