Marinated Summer Vegetables

This easy homemade marinade is quick to whip up and never get old. Try different veggie combos all summer long and grill on the barbecue.

Ingredients

  • 4 C. assorted veggies, cut into 1-inch chunks (summer squash, cucumbers, halved cherry tomatoes, sweet peppers, or snap beans)
  • 3 Tbs. fresh basil, cut into thin strips
  • 1 large clove garlic, quartered
  • 1/2 C. water
  • 1/4 C. white or wine vinegar
  • 2 Tbs. sugar
  • 1/2 tsp. salt
  • 1/4 tsp. freshly ground black pepper

Directions

Mix vegetables and basil together and place in a clean quart jar or plastic container. Place remaining ingredients in a small saucepan, bring to a boil, then pour over vegetables. Chill well and serve. Flavors improve as they marinate.
