Marinated Tuna

Ingredients
- 1 1/4 lbs. tuna steaks, about 3/4-inch thick
- 2 Tbs. red wine vinegar
- salt
- 3 Tbs. olive oil
- 1 garlic clove, finely chopped
- 2 Tbs. chopped parsley
- 1 Tbs. chopped mint
- 1/2 tsp. crushed red pepper
Directions
Fill a pot that will fit a steamer rack with 1/2 inch water. Bring water to a boil. Cut tuna into 1/2-inch-thick strips. Spread the fish on the steamer rack. Set rack in the pot. Cover and allow tuna to steam for 3 minutes or until slightly pink in the center. Test for doneness. In a deep dish, beat the vinegar and salt together. Add oil, garlic, herbs and crushed red pepper. Stir in the tuna pieces. Let stand for 1 hour, then serve.
