Mashed Garlic And Onion Potatoes

Add fresh garlic, thyme and onion to potatoes to get this flavorful side dish that goes well with any meal.

Ingredients

  • 6 medium russet potatoes, scrubbed
  • 1 Tbs. olive oil
  • 6 cloves garlic, minced
  • 2 medium yellow onions, chopped (about 2 C.)
  • 1/4 C. skim milk
  • 1/2 tsp. salt
  • 1/2 tsp. black pepper
  • 1 Tbs. chopped fresh thyme (or 1 tsp. dried)
  • 1 Tbs. butter, melted

Directions

Cook potatoes until fork tender (about 30 min). While potatoes are cooking, heat olive oil in a medium skillet over medium heat. Add garlic and onions, cook, stirring frequently until soft and golden (about 10 min). Drain potatoes, reserve 1/4 C. liquid. Cool potatoes until you can handle them to slip off the skins. Cut potatoes into quarters and return to the saucepan. Add 1/4 C. potato water, milk, salt and pepper. Heat mixture until heated through (about 5 min). Mash potato mixture until smooth. Stir in onion/garlic and thyme. Spoon potatoes into a serving dish, drizzle with butter and serve.
