Ingredients

  • 2 cups cold mashed potatoes
  • 1 cup flour
  • 1 egg, beaten
  • 3/4 tsp. salt
  • 1 cup of peas
  • ½ cup of gravy
  • 1 cup leftover Thanksgiving turkey, shredded
  • 1/4 cup thick gravy

Directions

Place the mashed potatoes along with the flour on to a working surface. Work in the egg, salt and remaining flour into the potatoes using either your hands.
Once everything is roughly mixed, gently knead the dough for a couple of minutes. Add in the rest of the flour if need be.
Then, roll the dough out until it’s around 3/4 ” in diameter.
Using your pastry cutter or a knife, cut the rope into lengths of 3/4″.
Next, roll each piece of small dough down the tines of a fork.
Place a large pot of water to a boil, add salt and let boil alone for 1 minute. Then, drop the pieces in the water. Once they begin to float, they are done.
To complete your meal,heat up the leftover turkey, peas, and gravy in a skillet, and serve on top of the gnocchi.
